This is a recipe for Moroccan Chicken, which is very unique, flavorful, as well as healthy. The originating recipe was found in Prevention’s Healthy One-Dish Meals in Minutes cookbook, and is one of my favorite recipes. My modifications from the original recipe include altering some of the procedures, as well as altering the measurements of some ingredients. It an aromatic dish, and has unique presentation qualities. Parmesan flavored couscous complements this dish well, and either diced or petite diced tomatoes can be used based on preference. The recipe also adapts well to strict health substitutions, such as fat free broth, low sodium tomatoes, etc. While I have tried it with fresh parsley and thyme, I prefer the flavor provided with the dried herbs.
